
Wayzata’s downtown bakery scene is about to get a new, yet familiar, addition. Rustica Bakery, a well-known name in the Twin Cities, will soon open its doors at 794 Lake Street East, the space formerly occupied by Wuollet Bakery.
For decades, Wuollet was a staple in Wayzata, serving generations of families with its cakes, pastries, and breads before closing last year. The space has sat empty since, but Rustica, under new ownership, is stepping in to fill the void with its signature artisan breads, pastries, and expertly crafted coffee.
“This is step one,” said Brent Frederick, owner of Jester Concepts, which acquired Rustica in late 2024. “I think we’re filling a void in that market right now, and we’re excited to fill it,” Frederick said in a statement to the Minnesota Star Tribune.

A Neighborhood Bakery with a Proven Reputation
Rustica is no stranger to Minnesota’s food scene. Since opening in Minneapolis nearly two decades ago, it has built a loyal following with its European-style bread, croissants, and coffee program. The restaurant has expanded in recent years, adding a second location at Southdale Center, and now, with Wayzata on the horizon, it’s clear the brand is continuing to grow.
The Wayzata location, slated to open this summer, will feature indoor seating for about 30 guests, with potential patio seating available in the warmer months. Longtime Rustica fans will find their favorite menu items, from the bakery’s famous bittersweet chocolate cookies to its miche loaves, as well as some new grab-and-go options designed with busy commuters and lake visitors in mind.

A Welcome Addition to Lake Street
The return of a bakery to this space is good news for Wayzata residents, many of whom were saddened by Wuollet’s closure. Rustica aims to be more than just a place to pick up a pastry—it hopes to become part of the daily rhythm of downtown life.
As other coffee shops in the area have closed or changed hands in recent years, the timing of Rustica’s arrival couldn’t be better. The bakery’s focus on high-quality, handmade products and its commitment to fostering community make it a natural fit for Wayzata.
While an exact opening date has not been announced, Rustica is expected to open its doors by summer 2025. Until then, residents will be keeping a close eye on 794 Lake Street, eagerly awaiting the return of fresh-baked bread and morning coffee along Wayzata’s lakefront.
