IN THE KITCHEN WITH ELISHA: Chicken Stir Fry

With spring here everyone is spending more time outdoors and less time in the kitchen. Try this quick and simple meal that is tasty and fun to make with the family.

Chicken Stir Fry

1 Boneless Chicken Breast serves 2-4

1 Cup Fresh Broccoli

1 Cup Sliced Fresh Sliced Mushrooms

1 Medium Sliced Onion

3 Tbs Olive Oil

1 Tbs Sesame Oil

3 Tbs Flour

2 Tbs Soy Sauce

2 C White Rice Cooked

Dash of Salt

Stir Fry Sauce: In a small bowl combine: Salt, Flour, Soy Sauce, Sesame Oil and whisk. Set aside.

In a large skillet, (heat should be medium-hot to avoid burning the olive oil), add olive oil, then diced chicken, cook until no longer pink. Add the vegetables, lightly cook (med-high) vegetables until they are slightly cooked. Toss everything together with the Sauce, and serve over white rice.

Serves 2-4
