Have you ever started making dinner and thought, I have changed my mind, what else can I make. While in the process of making Tacos on evening I created a yummy and delicious South Western Lasagna with the ingredients that I had. My Family was amazed at how good dinner was that evening. Now they ask for it once a week!

- 1 Small Can Green Chillies
- 1 Small Onion
- 1 Small Yellow Pepper

- ½ Can of Sweet Corn
- 8 Flour Tortillas
- 1 Cup Mozzarella Cheese
- 2 Cups Mexican Blend cheese
- Taco Sauce
- Sour Cream
- 2 Tbsp Any Cooking Oil

In Skillet Brown the Hamburger.
While hamburger is browning, chop up the Onion and Peppers.
Add the Green Chillies, Onions, Red Pepper, Yellow Pepper and Taco Seasoning (follow packet directions) to your hamburger, stir and let simmer for 5 minutes.
Place 2 Tbsp of Cooking Oil in the bottom of an oven safe dish. One at a time, place the 4 Flour Tortillas coating the bottoms of Tortillas with oil. Layer 4 more Flour Tortillas and repeat with Hamburger mixture and 1 Cup Mozzarella Cheese and the remaining Mexican Cheese Blend.
Bake at 375 degrees for 35 minutes.
When the cheese is bubbling and brown your lasagna is fully cooked. Let sit for 5-10 minutes.
Serve with sour cream, taco sauce, and if you like lettuce and tomatoes.

That looks yummy! I\’m not the biggest fan of spice, so I was wondering if there\’s a way to make it without the green chillies (assuming they are spicy!)

Great Question! In my opinion they are not spicy. You can also just leave them out of the recipe too.
